Carrot coconut soup
If you want to try something else besides plain carrots, try this simple soup that is nutritious and easy to prepare.
Needed time: 30 minutes
Needed ingredients:
• 2 cups of sliced carrots
• 5 oz. of coconut milk
• 1 chopped onion
• 2 tablespoons of sliced ginger
• 1 teaspoon of turmeric or curry powder
• 1 cup of sweet potatoes, cut into cubes
• 1 tablespoon and 3 cups of bone broth
• 4 cloves of chopped garlic
• Salt and white pepper (optional)
Preparation:
1. Chop the onion and let it rest for 5 minutes.
2. Heat one tablespoon of broth and sauté the onion for 5 minutes. Stir often.
3. Add the ginger and the garlic and sauté for 1 more minute.
4. Then, add the turmeric.
5. Add the sweet potato, the carrots and the broth and sauté for 15 minutes.
6. Add the coconut milk.
7. Blend the mix.
8. Return it to the pot and reheat it.
